Dark ruby in colour. On the nose prominent red and black fruited aromas of cranberries, cherries and blackberries are the hallmark of the wine. They are then joined by a glimpse of supporting spice and earthy undertones. Once on the palate, these same layered red and dark fruit flavours reappear filling out the front and mid palate before being encapsulated with a fine lattice like tannin frame. This ensures that the require bordering of the fruit is delivered and the wine remains focused and controlled.
Each variety is fermented separately in stainless steel open fermenters. Ferment temperatures are a touch lower than for our other reds and oak is used sparingly with a desire to retain some fruit freshness and softness to the wine.
The Three Springs Vineyard is located alongside the original Schild Family Estate. Planted in 1926 the grenache vines are classified as ‘Survivor Vines’ in the Barossa Valley Old Vine Charter. The Mataro for this wine is grown in the ‘Kleemanns Vineyard’ where vines are high on the Eastern Hills overlooking Rowland Flat. Shiraz is taken from a blend of parcels throughout our Estate vineyards in the Southern Barossa.
The 2019 growing season commenced with a warmer than average winter and spring before a combination of a couple of hot spells and then near perfect conditions eventuated later in the season as we closed in on harvest dates. This all resulted in some early harvest sugar accumulation in some blocks without necessarily the required flavour development in the grapes. A year when there was no substitute for winemakers spending significant time in the vineyards. If this was done and canopies and moisture was managed well, the flavour components did catch up and whilst yields were low, the resulting quality was very good.
