This Cabernet Sauvignon is a vibrant fruit driven wine with abundant bright red fruit and a rich round palate. Lingering red berries and subtle oak complete this Cabernet that is ready for immediate enjoyment, and will continue to improve over the next 10 years.
The base of Coonawarra Cabernet Sauvignon from our own managed vineyard is supported by grower vineyards from Wrattonbully, Padthaway and the Limestone Coast. The core of Coonawarra comes from the Terra Rossa soil and is low yielding producing intensely structured wine with typical varietal characters. Each of the individual vineyards and blocks of our growers add dimensions of complexity to the final blend and ensure consistency of each vintage release. The vineyards are all established with proven quality and moderate yields. Each block is harvested once the balance of flavour, tannin ripeness and flavour balance has been reached.
The cool harvested grapes undergo 2-6 days of skin contact prior to fermentation, and start slowly as the fermenting must takes time to warm up to optimum ferment temperature. After 6 - 8 days of fermentation the must is pressed off to complete fermentation in stainless steel tanks before a portion is transferred to French oak hogsheads and barrels for maturation. The wine undergoes natural malo-lactic fermentation over winter and matures for a further 18 months before final blending and bottling.
