Located on the northern end of the Coonawarra Terra Rossa strip, our grower managed Chardonnay vineyard was planted 20 years ago and produces a consistent crop on the well drained soils. The vertical shoot positioning system and the North South row orientation allows for varying levels of fruit exposure, with the intention of developing complexity of flavour. Harvested at night, the cool grapes were de-stemmed and sorted before being delivered to the winery for immediate processing.
This Chardonnay is a fruit and buttery driven wine. Vibrant notes of nectarine and passionfruit are nicely balanced with vanilla spices. The palate is fresh and crisp among generous citrus flavours, complementing the rounded mid palate for a complex finish.
Regular vineyard monitoring to assess the ripening flavours was undertaken to capture the harvest at a point of maximum flavour complexity. The sun exposed ripe bunches, display ripe tropical characters while the semi-shaded bunches capture ripe pear, stone fruit and melon flavours. The full shaded bunches display crisp apple, crunchy pear and hints of lime. The cool grapes were crushed and pressed and the juice allowed to cold settle for 24 hours before being racked and inoculated with a Burgundian yeast strain. 15 percent of the juice was transferred to French oak barrels for fermentation, while the balance remained in temperature controlled stainless steel tanks where it began fermentation at 14 degrees and finished off being slightly warmed to build additional weight and complexity. The barrels were blended back into the tank fermented wine before the wine was stabilised and bottled.
