Limestone Coast, South Australia
This Shiraz is an intense fruit driven wine with abundant bright black fruit flavours and a rich round palate. Lingering dark red fruit, spice and subtle oak complete this Shiraz that is ready for immediate enjoyment, and will continue to improve over the next 10 years.
Produced from grapes grown on grower vineyards that are attentively managed by the family owners from the sub-regions of Wrattonbully, Robe, Coonawarra and Padthaway. Each vineyard is managed carefully to balance crop levels to match the individual growing conditions of each season. The Coonawarra, Padthaway and Wrattonbully vineyards are all grown on free-draining Terra Rossa soils, producing rich ripe berry fruit flavours with abundant ripe tannins. The Robe vineyard, located on a sandy loam soil and with it’s close proximity to the ocean produces vibrant perfumed spiced berry aromas and flavours that add floral complexity, spice and natural acidity to the final blend of our Limestone Coast Shiraz.
Each block is harvested at peak flavour development and maturity over a period of two weeks and the vineyards are all fermented separately. Yeast strains are selected to enhance fruit characters and ensure clean and vibrant wines express the true vineyard characters. Time on skins and cap management varies from 10 to 18 days depending on extraction and fruit weight during fermentation. Upon the completion of fermentation the must is gravity fed into a tank press, preventing excess extraction. The pressings of each batch are assessed before blending to produce a wine with ripe and balanced tannin extraction, that is consistent in terms of style and quality each year. Selected batches are matured in American and French oak Hogsheads to enhance both tannin structure and complexity, and blended prior to bottling.
